Rosemary (Rosmarinus officinalis L.), family Lamiaceae, is a dense, evergreen, hardy, perennial aromatic herb of 90−200 cm height with small (2–4 cm) pointed, sticky and hairy leaves (Fig. 16.1). The upper surface of the leaf is dark green whereas it is white below; leaves are resinous. Rosemary has culinary uses too.
